Allioli recipe

This sauce is original from Catalonia and wellknown around Spain. The name Allioli comes from The two main ingredients all ( wich means garlic) and oli (which means oli).

Ingredients:
4 medium to large garlic cloves
-Salt to taste
- 2egg yolk
- A little bit of vinegar or lemon juice
- One cup extra virgin spanish olive oil

Preparation:
First you must pol the garlic cloves. After you must mince the garlic and then crush the garlic. Then put the crushed garlic into a small mortar and add some salt and pestle into a paste. Crack the eggs and separate the yolks. Put the yolks and the garlic paste into a mixing bowl. With a hand mixer on low speed, slowly pour the olive oil in a thin stream until a creamy sauce is firmed. And finally add some drops of lemon juice or vinegar while mixing it and the sauce is ready to eat.
